Mock Tuna Salad
1 1/2 cups of almonds (preferable soaked overnight) 1 cup sunflower seeds, soaked and drained 1/2 cup filtered water 1/2 cup minced red onion 1/2 cup minced celery Handful of fresh chopped parsley 1/3 cup of fresh lemon juice 1 Tablespoon sea salt 1 1/2 teaspoons dill salt to taste
Method
Place nuts and seeds in Vitamix or food processor and pulse until homogenized. Transfer mixture to large bowl and add remaining ingredients. Store in airtight container. Will keep up to one week.
Zucchini Hummus
5 cups zucchini 1/2 cup tahini 4 cloves garlic 1/2 cup lemon juice 1/4 cup Extra Virgin Olive Oil 1/2 teaspoon paprika sea salt to taste
Method
Incorporate in Vitamix or food processor and blend until smooth.
Walnut Pesto
1 cup chopped walnuts 1/2 cup pinenuts 2 cups fresh basil 1/2 cup extra virgin olive oil 2-3 cloves garlic fresh cracked pepper to taste sea salt to taste
